Spring Cleaning Recipes

Healthy Cabbage Salad

  • 6 cups cabbage (1/2 head)

  • 1 carrot (diced)

  • 1 mandarin oranges (peeled and sliced)

  • 4 cups lettuce (chopped)

  • 1 orange pepper (sliced)

  • 1/4 cup crushed almonds

  • 1 tbsp sesame seeds

Dressing

  • 1/2 cup rice wine vinegar plain

  • 3 tbsps sesame oil

  • 2 tbsps raw honey

  • 1 tsp pink sea salt

Directions

Add the cabbage, carrots, lettuce, pepper, almonds, sesame seeds and mandarin oranges to a bowl. Add all the dressing ingredients together in a jar, shake well, and dress the salad to taste.

Spring Cleaning Soup

  • 1 bunch asparagus

  • 1 cup of broccoli

  • ½ cup chickpeas

  • 3 cups water

  • 1 tbsp ghee or EVOO

  • ½ onion

  • 2 cloves fresh garlic

  • Salt and pepper to taste

  • ½ lemon

  • Parsley to taste

Directions

Heat the onions and garlic in ghee until the onions become translucent.  Add the asparagus and broccoli and cook for 10-minutes.  In a pot, bring the water to a boil, add the chickpeas and asparagus/broccoli bend.  Let everything cook for 15-minutes, then using an immersion blender, bring the soup to a creamy consistency.  Upon serving, add fresh lemon, salt and pepper, and parsley to taste.

 Yellow Dal Soup

  • 4 cups yellow lentils

  • 4 cloves of garlic (diced)

  • 1 tsp cumin

  • 1 tsp turmeric

  • A pinch of cayenne

  • A pinch of black pepper

  • 4 cups of vegetable stock

  • 4 tbsp EVOO

  • 1 lemon

  • Parsley to taste

Directions

In a soup pot, add the EVOO, garlic, cumin, turmeric, cayenne pepper, and black pepper and stir on medium heat for 3-minutes.  Then add the lentils and stir for another 2-minutes.  Add the vegetable stock and let it cook for 30 to 45-minutes.  When ready to serve, squeeze the juice of a fresh lemon on top of the soup (1 lemon per bowl) and dress with parsley. 

Green Goddess Smoothie

  • 1 green apple

  • 1 handful spinach

  • 1/2 cucumber

  • handful of parsley

  • ½ avocado

  • 1 inch fresh ginger (peeled)

  • 2 cups almond milk (or water)

Directions

Place all the ingredients in a blender, run on high for 90 seconds and serve at room temperature.

Digestive Tea

  • ½ Lemon, juiced

  • 1 inch ginger root

  • 1 tsp honey

  • 4 – 6 cups of water

Steep:  5-minutes

This tea will aid in digestion and help ease stress.  It can be enjoyed throughout the day or 30-minutes prior to eating
