Kitchari

Ingredients

1 ½ cups sweet potatoes

2 cups spinach

¼ cup basmati rice

1 cup red lentils

½ cup yellow lentils

6-7 cups of water (you want it to be watery)

1 inch of ginger root (or 2 tbsp of ginger powder)

2 tsp coconut oil

½ tsp coriander seeds (or powder)

½ tsp cumin

½ tsp mustard seeds

1 tsp turmeric

Pinch of black pepper

Pinch of salt

Optional: add cilantro or parsley when serving


Directions

Add all the ingredients to your crockpot, cover, and let it cook on high for 3 to 4 hours (you want the sweet potatoes to be fork tender). Serve on its own or over 1/4 cup of basmati rice.
