Breakfast Berry Bread

This easy to digest, fibrous bread is a great way to start your day.

  • 3 bananas

  • ¾ cup of all-purpose gluten free flour

  • 1 cup tapioca flour

  • ½ cup chia seed

  • 1 ½ tsp baking soda

  • 1 cup honey

  • 1 tbsp salt

  • 1 lemon

  • 2 cups blueberries, blackberries and/or raspberries

  • 2 tbsp water

In a blender, process the chia seeds into a rough flour, then add the bananas, flour, baking soda, honey, salt, juice from one lemon, and water.  Once brought to a smooth consistency, pour into a bowl and stir in the berries.  Add mix to a bread pan and bake at 350 degrees for 25-30 minutes.  Let it sit 10-minutes before serving (it tastes even better the next morning).
